The bergamot tree grows up to four metres tall, bearing pear-shaped citrus fruit that ripens from green to yellow. Its name comes from the city of Bergamo in Lombardy, where the oil was first sold.

Today it is commercially grown in southern Calabria, whose climate and soil give the finest bergamot its prized character — and it famously flavours Earl Grey tea.
